This expression is matured for a full 12 years in refill American Oak Hogsheads before undergoing a distinctive double Oloroso Sherry finish.
The first stage of re-aging takes place in 230-litre American Oak barrels, previously seasoned with Oloroso Sherry for five years and shipped directly from a Bodega in Jerez de la Frontera.
The second stage takes place in specially coopered 500-litre European Oak Butts, forming part of our own ageing solera. These casks are also traditionally seasoned with Oloroso Sherry in Spain.
Tasting Notes:
The distinctive peaty character of Island whisky combines beautifully with the rich sweetness of Oloroso-seasoned casks. Layers of luscious dried fruit complement the gentle smoke and peat, creating a wonderfully balanced, rich and satisfying expression.
