The 100% Islay Sherry Cask Matured was
distilled from Kilchoman’s 2011, 2012 and
2013 barley harvests and matured for a
minimum of 11 years in 16 ex-oloroso
sherry butts. During maturation, layers of
dried fruits and rich spices have infused
into the whisky which balance beautifully
with the natural citrus sweetness and peat
smoke of Kilchoman.
The 100% Islay editions celebrate barley
grown on site but once it’s harvested, the
Kilchoman team also malt the barley using
traditional floor malting techniques, first
germinating and then smoking the barley,
using local Islay peat, to give the whisky its
20 PPM lightly peated character.
Tasting Notes
Orange peel, dried fruits, light peat smoke
and sweet spices.
Palate:
Rich smoke, and dark chocolate with honey,
cooked apples, and malty sweetness.
Finish:
Grilled fruits, plums, currants, and lasting wood smoke.
